I'd like to recommend a few of the resources that I have found invaluable in learning about edible plants.
Green Deane hosts a youtube series called Eat The Weeds. His channel has more than 100 videos on various edible plants. He is based out of Florida, but a good number of the plants he discusses are very common throughout the US. His channel is located at youtube.com/user/EatTheWeeds
I highly recommend the book, "The Forager's Harvest" by Samuel Thayer. It is chock full of wonderful information on a multitude of plants. He does an excellent job discussing uses and harvesting/storage techniques. I have a few other books and field guides, but none compares to that one.

Elias and Dykeman?
Is it the Elias and Dykeman guide? That's the first one that I used. It's got a great selection of plants and is very useful for getting an idea of what a particular species is used for.

Yes it is the one by them. It is my first book as well. I find it very informative and easy to use.

Plant Spirit Healing
I just picked up Plant Spirit Healing: A guide to working with plant consciousness, by Pam Montgomery. I've only read a dozen or so pages, but it seems like a fascinating read. Its not directly about foraging, but it goes into great detail about the healing powers of certain plants and how to engage with the plants spirit. it is tough to find a book that combines both edible & medicinal plants, so this was a good choice for me on the west coast
